Blueberry protein muffin recipe

Ingredients:
  • 2 serves Macro Mike peanut butter protein powder
  • ¾ cup almond meal
  • ¼ cup lupin flour (highest protein, lowest carb flour)
  • 1 whole egg
  • 3 egg whites
  • 1 cup blueberries
  • 1 tsp cinnamon
  • 1 tsp turmeric powder
  • 1 tsp vanilla essence
  • ½ cup almond milk
  • 1 tsp baking powder
Directions:
  • Preheat oven to 180 degrees Celsius
  • In a large bowl combine all dry ingredients
  • In another bowl whisk egg and egg whites and vanilla
  • Pour egg mixture into large bowl and combine together
  • Add almond milk last until you create a smooth paste consistency
  • Pour muffin mixture into a non-stick muffin tray
  • Bake in oven for approximately 30mins or until you can pierce muffin with a knife and it comes out clean
  • Serve or freeze for meal prep
Makes 6 muffins
Macros per serve: P: 16.4g, C:12.5g, F:8.2g
